हलवाई के जैसे बेसन के दानेदार लड्डू |

सामग्री
2 कप बेसन
आधा कप बारीक रवा
1 कप घी
1 टेबलस्पून काजू-बादाम (कुटे हुए)
2-4 इलायची कुटी हुई
1 कप शक्कर

लड्डू बनाने की विधि 
  • कड़ाही में बेसन डालकर धीमी आंच पर भूनें। 
  • घी को एक साथ न डालें, बल्कि इसे पिघलाकर धीरे-धीरे बेसन में किनारों से डालती जाएं और चलाएं। 
  • बेसन को धीमी या मध्यम आंच पर लगाकर चलाते हुए पकाएं। 
  • ध्यान रहे इसे तेज़ आंच पर न भूने, वरना बेसन जल जाएगा और लड्डू अच्छे नहीं बनेंगे। 
  • कुकिंग एक्सपर्ट्स हमेशा बेसन को धीमी आंच पर भूनने की सलाह देते हैं, इसमें थोड़ा वक़्त लगता है। 
  • जब बेसन से खुशबू आने लगे और यह सुनहरा हो जाए तो आंच से उतार लें। 
  • अब एक चम्मच घी डालकर रवा को भी सुनहरा होने तक भूनकर निकाल लें। 
  • चीनी का पाउडर बना लें। 
  • बेसन और रवा जब ठंडा हो जाए तो एक बर्तन में निकालकर इसमें शक्कर का पाउडर, कुटे हुए काजू-बादाम, इलायची और आवश्यकतानुसार घी डालकर अच्छी तरह मिलाएं। 
  • याद रखिए बेसन भूनते समय ही ज़रूरी नहीं है कि आप ढेर सारा घी डालें। 
  • यदि लड्डू बनाते समय आपको घी कम लग रहा है तो आप मिश्रण में पिघला हुआ घी डालकर मिक्स कर सकती हैं। 
  • जब आप आपको लगे कि इसके लड्डू बन सकते हैं तो इससे लड्डू बनाती जाएं। 
  • रवा डालने से लड्डू दानेदार बनते हैं और मुंह में भी नहीं चिपकते हैं। 
  • काजू-बादाम और इलाजची से इसकी स्वाद और खुशबू बढ़ जाती है।

वेजीटेबल मंचूरियन (Veg Manchurian)



4 लोगों के लिए

वेजीटेबल मंचूरियन की सामग्री

100 ग्राम बंदगोभी
50 ग्राम गाजर
50 ग्राम प्याज
50 ग्राम मशरुम
30 ग्राम हरा धनिया
30 ग्राम हरा प्याज
10 ग्राम अदरक
10 ग्राम लहसुन
5 मिली. ग्रीन चिली सॉस
5 मिली. सोया सॉस
नमक स्वादानुसार
चुटकी भर अजिनोमोटो
50 ग्राम मैदा
50 ग्राम कॉर्नफ्लोर
तलने के लिए तेल आवश्यकतानुसार।

वेजीटेबल मंचूरियन बनाने की विधि
  • बंदगोभी, गाजर, प्याज, मशरुम, अदरक और लहसुन को बारीक काट लें। 
  • कटी सब्जियों में नमक मिलाएं। 
  • इसके बाद इन सब्जियों में मैदा और कॉर्नफ्लोर भी डालकर ठीक से मिला लें। 
  • अगर जरूरत पड़े, तो थोड़ा पानी मिला लें। 
  • इस मिश्रण से बराबर-बराबर आकार की गोलियां बनाएं।
  • कड़ाही में तेल गरम करके सुनहरा होने तक सभी गोलियों को तलें। 
  • अब थोड़ा तेल गरम करके उसमें बारीक कटे अदरक, लहसुन और प्याज को भूनें और फिर उसमें पानी डालकर ग्रीन चिली सॉस, सोया सॉस, अजिनोमोटो और हरा धनिया डालें। 
  • इसे गाढ़ा करने के लिए कॉर्नफ्लोर डालें। थोड़ा खौलने पर इसमें गोलियां डालकर उतार लें। 
  • वेजीटेबल मंचूरियन तैयार है। 
  • इसे गरमागरम परोसें।

Chawal Ki Kheer

Chawal ki kheer or rice kheer is a traditional rice pudding made for most occasions in Indian homes. It is known by various names in different regions of India each having different preparation style. Rice kheer is a popular Indian sweet dessert made with basmati rice, milk, nuts and saffron. It is a rich, creamy dessert which is very easy to prepare and does not required much cooking skills. It can be served hot and chilled. Being filled with nuts and dried fruits, it becomes part of any festive menu and special occasions.

Ingredients:

4 Cups Milk
5 Tablespoons Basmati Rice
½ Cup Sugar
2 Green Cardamoms Crushed
10 Almonds Blanched & Sliced
1 pinch saffron strands (kesar) or 10 to 15 saffron strands
10 chopped or sliced unsalted pistachios (pista)
1 tablespoon golden raisins (kishmish)



To make Chawal ki Kheer follow these steps: 

  • Bring milk to boil in a cooker. Then add a few saffron strands in the milk.
  • Add rice, sugar and cardamoms. Stir till sugar is dissolved. Close cooker.
  • Bring to full pressure on medium heat. Reduce heat and cook for 10 minutes.
  • Remove cooker from heat. Allow to cool it naturally. 
  • Open cooker.
  • Again, place a cooker on the medium heat and add pistachios, kishmish, cook until a creamy consistency is obtained (approximately 2 minutes), stirring constantly.
  • Place kheer in a serving bowl. Serve hot or cold. 
  • Garnished with almonds.

Ingredients:

Soya Chaap (सोया चाप ) – 5 (250 gms)
Curd (दही ) – 1 small bowl
Coriander powder (धनिया पाउडर) - 1 tsp
Garam Masala (गरम मसाला ) - 1/2 tsp
Ginger-garlic paste (अदरक पेस्ट ) - 1/2 tsp
Red chili powder (लाल मिर्च पाउडर ) - 1/2 tsp
Salt (नमक ) - 1 tsp or as per taste
Other ingredients for Marinating:
Maid (मैदा ) - 1/2 cup (50 gms)
Turmeric powder (हल्दी पाउडर ) - 1/4 tsp
Chili flakes (चिली फ्लैक ) - 1/2 tsp
Black pepper(काली मिर्च )- 1/4 tsp
Oregano (ऑरेगैनो) - 1/2 tsp
Soya chunks (सोया चंक ) - 1 cup (100 gms)
Oil (तेल )- for frying


To make fried Soya Chaap, follow these steps:


To marinate Soya Chaap: 

1. In a bowl, take 1 small bowl dahi, now add 1/2 tsp ginger paste, 1/2 tsp garam masala,1 tsp coriander powder, 1/2 tsp red chili powder,1/4 tsp turmeric powder, 1/2 tsp salt, Mix all ingredients well. 

2. Dip the soya chaap in the masala and coated well with spoon. 

3. Keep aside for 20 minutes so that spices are absorbed well. 

4. Now take 5 soya chaaps, 

5. Put 4 to 5 cut marks on the soya chaap with the help of a knife. 

6. Take 1/2 cup refined flour add water and make thin paste. 

7. In the flour paste, add 1/2 tsp chili flakes,1/ tsp coarsely ground black pepper, add 1/2 tsp oregano, add 1/2 tsp salt. Mix all ingredients well. 

8. After 20 minutes, Soya chaap is marinated and ready. Now coat it with coarsely ground soya chunks. Coat all likewise. 

For Deep Frying 

1. Heat a pan with oil. When the oil is just hot enough, put the soya chaap in a pan. 

2. Fry chaap for 4-5 minutes till it turns golden. 

3. Drain chaap on a tissue paper. 

4. Serve fried soya chaap hot with green or red sauces.

Matar Paneer/Mutter Paneer Recipe


Matar paneer is a vegetarian dish consisting of peas and paneer mingled in a tomato-based sauce, spiced with garam masala. It is often served with rice and Chapatti. Various other ingredients are often added, such as corn, yogurt or cream. This easy to prepare tasty matar paneer is quite often made at home. It is one of the popular paneer recipe made in north India.

Ingredients: 
1/4 Cup Lemon Juice 
10 g Ginger
6 Flakes Garlic 
1 Teaspoon Turmeric Powder 
2 Teaspoons Red Chilli Powder
1 ½ Tablespoons Coriander Powder
1 Tablespoon Cumin Powder 
½ Teaspoon Garam Masala Powder
1 Tablespoon Salt 


Other Ingredients: 

250 Gms Paneer 
4 Medium (400 Gms.) Onions grated 
2 Large (350 Gms.) Tomatoes chopped
2¾ Cups Whey or Water
5 Cups Fresh or Frozen Peas 
1 Tablespoon Coriander leaves chopped Vegetable oil for cooking

To make Matar Paneer recipe follow these steps: 

  1. In a grinder, grind ginger and garlic into a paste.
  2. Cut paneer into small cubes.
  3. Heat oil in a pan for about 3 minutes.
  4. Fry paneer till it becomes light golden brown. Drain off excess oil leaving ½ cup in a pan.
  5. Place a pan on high heat.
  6. Add onions and fry till golden brown.
  7. Add ginger-garlic paste. Stir for a few seconds.
  8. Add turmeric, chilli, coriander and cumin powders, salt, tomatoes and 1/4 cup whey or water. Cook tomatoes approximately for 5 minutes till it becomes pulpy and oil traces appear over the gravy. Keep on stirring.
  9. Now add peas. Stir fry for about 2 minutes. Add remaining whey or water (2½ cups).
  10. Close the lid of a pan. Cook for 2 min on full heat. Reduce heat and cook for 1 minute. Open pan.
  11. Add paneer and simmer for about 5 minutes.
  12. Add garam masala powder. Stir slowly.
  13. Serve hot, garnished with coriander leaves.

Phool Gobhi Pakora | फूलगोभी पकौड़ा | Quick Recipe|

Oil: for frying


To make gobhi pakora,  follow these steps:

Take besan in a bowl.
  • Add chopped green chillies, red chilli powder, amchoor powder, dhaniya powder and salt.
  • Mix all the ingredients well.
  • Now coat the boiled gobi with besan for deep fry.

For Deep Frying
  • Heat a pan with oil. When the oil is just hot enough, put coated boiled gobhi in a pan.
  • Fry gobhi pakoras till it turn golden.
  • Drain gobhi pakoras on a tissue paper.
  • Serve gobhi pakora hot with green or red sauces.

4. Boil the water until it comes down to half.

Aloo Sandwich | Grill Sandwich | Potato recipe

For Sandwich stuffing:
4 aloo/potatoes, boiled
1 bowl chopped onion
handful coriander
4 chopped green chilli
½ tsp garam masala
1 tsp amchoor / dry mango powder
¼ tsp salt
8 slices bread, white / brown
4 tbsp tomato sauce
4 tbsp green chutney

To make aloo sandwich, follow these steps:
  • In a large bowl take 4 boiled and mashed potato, chopped onion, 1 tbsp coriander, ½ tsp chilli powder, 1 tsp chaat masala and ¼ tsp salt.
  • Mix all the ingredients.
  • Now take 2 slices of bread and spread prepared aloo masala over bread slice.
  • Now place the bread slice in sandwich maker.
  • Roast the sandwich with little oil in sandwich maker.
  • Finally, cut the bread in half and serve spicy aloo sandwich with green or red sauce.

Murmura Chaat is the famous street food you can eat at any time of the day. This spicy and crispy chaat made with yellow puffed rice, different namkeen mixture, roasted gram, aloo bhujia, or sev. To enhance the flavour of chaat add chopped onions, tomatoes, green chillies, black salt, and lemon juice. This chaat is prepared with green or tamarind chutney. To make Murmura Chaat, in a bowl take puffed rice, Navratan namkeen, roasted gram, aloo bhujia and salt. Mix well all the ingredients. Now add chopped onions, tomatoes, green chillies, oil and lemon juice. Again mix well. Garnish with chopped coriander leaves. Serve Murmura Chaat immediately. This recipe is require only 1 teaspoon oil so it can be a good option for the individual who is on diet.

3. Now add green chilies, carrots, green capsicum, green beans, and cabbage and sauté. Avoid overcooking of vegetables.

4. Add boiled rice and cook for a minute.

5. Now seasoned with salt, pepper, soy sauce, and green chilli sauce. Again cook for a minute.

6. Garnish veg fried rice with some chopped spring onion greens.

7. Enjoy veg fried rice with veg Manchurian.

Green Tea |How to make Green Tea|Helps in Weight loss|Burns Body Fat







There are several health benefits associated with Green tea. It contains polyphenol antioxidants that reduce inflammation in the body, a known trigger of premature aging. Green tea cleanses the body from toxins, aids in digestion heal wounds, improves heart and mental health, regulates body temperature, and provides energy. To Make Green Tea, take a pan add 2 cups of water along with grated ginger. Bring water to a boil. When the water is reduced to 1 cup, remove the pan from flame. Strain the water and pour it in a cup. Place the green tea bag in boiled water. Brew it for 6-8 minutes and remove the teabag. Add lemon and honey and stir it properly. Now tea is ready to drink.

Green Chutney| Hare Dhaniye ki Chatni | Easy to Make......



Green chutney is common to most Indian households. It is prepared with green coriander leaves, green chilli, garlic, ginger and lemon juice is simply irresistible. It is used with snacks, sandwiches and in preparation of various types of chaats. To make Green Chutney, rinse the coriander leaves well in water and roughly chop them. Now take the chopped coriander leaves, chopped green chillies, ginger, garlic, sugar, lemon juice, potato, salt and grind to a smooth paste in a grinder jar or a small blender jar. Add 1 or 2 tsp water and grind to a smooth chutney. You can also add a few teaspoons more of the water if required. But don't make the chutney too thin or watery. The addition of lemon juice enhances the flavours of coriander and prevents discolouration of the greens and the pieces of potato enhances the texture of green chutney. Now transfer the chutney in a bowl and keep aside. Use this green chutney as required or with samosas / other chaat recipes.
