Chawal Ki Kheer

Chawal ki kheer or rice kheer is a traditional rice pudding made for most occasions in Indian homes. It is known by various names in different regions of India each having different preparation style. Rice kheer is a popular Indian sweet dessert made with basmati rice, milk, nuts and saffron. It is a rich, creamy dessert which is very easy to prepare and does not required much cooking skills. It can be served hot and chilled. Being filled with nuts and dried fruits, it becomes part of any festive menu and special occasions.

Ingredients:

4 Cups Milk
5 Tablespoons Basmati Rice
½ Cup Sugar
2 Green Cardamoms Crushed
10 Almonds Blanched & Sliced
1 pinch saffron strands (kesar) or 10 to 15 saffron strands
10 chopped or sliced unsalted pistachios (pista)
1 tablespoon golden raisins (kishmish)



To make Chawal ki Kheer follow these steps: 

  • Bring milk to boil in a cooker. Then add a few saffron strands in the milk.
  • Add rice, sugar and cardamoms. Stir till sugar is dissolved. Close cooker.
  • Bring to full pressure on medium heat. Reduce heat and cook for 10 minutes.
  • Remove cooker from heat. Allow to cool it naturally. 
  • Open cooker.
  • Again, place a cooker on the medium heat and add pistachios, kishmish, cook until a creamy consistency is obtained (approximately 2 minutes), stirring constantly.
  • Place kheer in a serving bowl. Serve hot or cold. 
  • Garnished with almonds.

Vegetable Fried Rice is tasty, healthy and super-quick fried rice recipe that kids and adults would love alike to put together. Nutritious veggies are sauteed with garlic, chilli and steamed rice along with savory sauces and vinegar. You can easily customize it by adding your favourite vegetables, which adds nutrition and texture to the dish. You can serve this vegetable fried rice with a mouth-watering spicy curry for lunch or dinner.

Ingredients:

2 bowls boiled rice
1 bowl grated cabbage
1 bowl chopped green beans
1 bowl chopped green capsicum
1 bowl chopped carrot (optional)
½ bowl chopped onion
4 -5 green chilies chopped
½ tsp ginger garlic paste
½ tsp red chili powder
¼ tsp Ajinomoto salt (optional)
½ tsp salt
Oil for deep frying




Sauces 


1 tbsp soya sauce
1 tbsp vinegar
1 tbsp green chilli sauce



To make Vegetable Fried Rice recipe follow these steps:

1. In a cooker add 4 to 5 cups water, ½ tsp salt, and 2-3 drops of oil to a gentle boil. Now add the drained soaked rice.

2. In a pan heat oil and add ginger garlic paste and saute.

3. Now add green chilies, carrots, green capsicum, green beans, and cabbage and sauté. Avoid overcooking of vegetables.

4. Add boiled rice and cook for a minute.

5. Now seasoned with salt, pepper, soy sauce, and green chilli sauce. Again cook for a minute.

6. Garnish veg fried rice with some chopped spring onion greens.

7. Enjoy veg fried rice with veg Manchurian.
